hottest Chef in London (and we mean that in more ways than one!) Ben Spalding has confirmed the opening of his latest project John Salt. The new joint will be located on Upper Street in Islington and we have to say anything which isn’t a chain or naff bar on that street can only be a good thing.

The restaurant “Will feature serious cooking using rare ingredients”. We’re loving the sound of “chicken on a brick” – a London house brick coated in a caramel glaze, pairing chicken liver mousse with crispy chicken skin, circled by a mix of sweetcorn kernels, lingon berries, pearl barley and a white onion puree. And “customers are encouraged to actually lick the brick” – seriously lick a brick – we love this s**t! There is also talk of salt marsh lamb wraps and crispy chicken skin sandwiches plus a bar to enjoy drinks pre and post dinner and music from the brains behind Field Day. Sounds like our kind of joint.
