This will be the third of Jason Atherton’s new ventures to open in 2024
He’s already opened gourmet hot dog concept Hot Dogs by Three Darlings in Harrods Food Hall and he’s flipping Pollen Street Social into Mary’s but that’s just the tip of the iceberg when it comes to Jason Atherton and restaurants this year. Neighbourhood Three Darlings in Chelsea and the high-end Row on 5 on Savile Row (with Spencer Metzger leading the kitchen) are both still to come, and he’s also bringing us British brasserie Sael this September too.
Taking over the old Aquavit site in St James’s Market, the 85-cover restaurant will be a celebration of “all things British” with a menu that features only ingredients sourced from the British Isles, like Orkney scallops, Cumbrian lamb, Carlingford oysters and Highland wagyu. Executive Chef Dale Bainbridge, who had been heading up the kitchen at Pollen Street Social, will be leading Sael, where the menu will feature an option for diners to choose a vegetable or protein cooked on the wood-fire grill and then customise it with a range of sides. There’ll also be other dishes on offer like:
- mixed grill with a variety of British meats
- Cumbrian lamb hotpot
- hundred-layer snail and ox cheek lasagne
- jam roly poly with Jersey milk
British beers and wines will also be represented on the drinks list, with additional classic and modern world bottles and house wine on tap. And above Sael there’ll be a separate bar, Apples & Pears, decked out with works from the Young British Artists and a DJ booth, with cocktails made from locally sourced ingredients and snacks from the restaurant downstairs.
