Chilli crisp has had its moment on noodles and dumplings, but indy brand Mama’s Fire wants to prove it belongs on your Tuesday night egg mayo sandwich too.
The brand makes its Sichuan chilli crisp the way its founder remembers it from her mum’s kitchen: handcrafted in small batches in the UK, with Sichuan peppercorns for that signature tingle rather than a straightforward burn. It’s good enough that the Sweet Chilli Shiitake jar picked up a Great Taste 1-star award, and it’s become a regular fixture at Raye the Store, the pop-up grocery concept with a curated edit of the most interesting independent food, drink and beauty brands. This time round it’s popping up at 96 Kensington High Street, where Mama’s Fire will be running the masterclass in person.
For this Insiders masterclass, Mama’s Fire is bringing the full range: Classic, Garlic, Xtra Hot and the award-winning Sweet Chilli Shiitake, for a session built around one idea. Chilli crisp is a pantry staple, not a garnish for special occasions. You’ll taste your way through all four flavours, then get hands-on making a quick cucumber chilli crisp salad, picking your own flavour and building a simple tamari and vinegar dressing to go with it. To finish? An egg mayo tea sandwich, cut into neat afternoon tea bites, finished with a spoonful of chilli crisp on top.
