Kāio is the newest spot to open at The Whiteley, the old department store’s vast new incarnation on Queensway. It takes its name from an old Latin word for kindling, and everything on the menu passes through fire in some form, whether that’s charcoal, open flame, or the tabun oven turning out flatbreads throughout service.
Head Chef Sachin Mistry has cooked his way through The Grill by Tom Booton at The Dorchester, BiBi, and Michelin-starred kitchens at The Cross at Kenilworth and Akoko. Menu highlights include torched yellowtail with sour cherry dressing, smoky aubergine with dates, honey and walnut, glazed Iberico pork with ginger, garlic, fennel and apple slaw, and grilled lamb neck with sour cream, tomato, mint and molasses. Pudding keeps the fire theme going too: churros with smoked maple syrup, salted butter and black truffle, or burnt meringue with coffee sorbet and gianduja ganache.
