HOSPO COUPLE HONEY SPENCER & CHARLIE SIMS TO OPEN SUNE IN HACKNEY

Sommelier Honey and GM Charlie are opening their very own spot on Broadway Market this winter

If ever there was a hospitality power couple, it’s Honey Spencer and Charlie Sims – between them they’ve worked at Lyle’s, Mãos, Evelyn’s Table, The Palomar and Brawn, as well as doing the wine list for Noma Mexico and managing the restaurant at Noma in Copenhagen respectively. Now they’re taking all those years of experience and pouring them into their very own restaurant Sune.

The stripped-back space will look out onto both Broadway Market and Regent’s Canal, and there’ll be an open kitchen pass where you can see the chefs at work. Michael Robins (ex-Pidgin, Acme Fire Cult and Akoko) will be heading up the kitchen, where he’ll be using the best British produce and wild foods across the menu, which features dishes like:

  • daily breads with accompaniments like grilled pagnotta with whipped lardo & rosemary
  • Galician sea urchin & preserved tomato
  • fruits de mer plate
  • egg, chips & anchovy
  • smoked eel Caesar salad
  • linguine vongole with fried garlic & bottarga
  • za’atar spiced lamb ribs with honey, harissa & salted yoghurt
  • hen-of-the-woods mushroom with taleggio sauce & picked cipollini
  • chocolate, cherry & pistachio tart with cherrystone cream

Of course Honey will be overseeing the wine list, which’ll change with the seasons, meaning sunny wines from the Adelaide Hills in the summer and robust reds from colder spots in the winter. The focus will be on making bottles and producers that she loves as accessible as possible but she’ll also be putting some fine and natural wines on there for those of you who want to try something a bit special.
