Sapling, the short-lived Dalston wine bar, is out and Hacha is in. Taking over the space is luxury tequila ambassador for Diageo, Deano Moncrieffe, who is opening a bar that’s all about the agave. Named after the axe used to cut agave pinas, Hacha will serve a range of tequilas, mezcals and other lesser-known agave spirits, many of which are hard to find in the UK.

You’ll be able to try these spirits individually; as a tasting flight where each serve is paired with a flavour enhancer (like anejo tequila with rum-soaked grilled pineapple); or in cocktails. The list includes the bar’s signature Mirror Margarita, available on tap, as well as reimagined versions of the Tequila Sunrise and the Batanga (tequila and cola).

Hacha will also be serving up a Mexican small-plates menu – we don’t have deets on many dishes yet apart from a trio of ceviche that comes with taster size cocktail sorbets. More booze in the food? We’re into it.
