GOILA BUTTER CHICKEN TO POP-UP AT CAROUSEL

Goila Butter Chicken, the Mumbai-based brand founded by Saransh Goila that’s has gained a cult following for its eponymous dish, is making the jump from deliveries and meal kits to a proper restaurant with a pop-up at the new-look Carousel in Fitzrovia. The Charlotte Street site, which Carousel moved into at the end of last year, is much bigger than the Marylebone original, meaning the team are able to run their regular guest chef residencies and have space for longer-term pop-ups, and that’s exactly where Goila Butter Chicken comes in, taking over the ten-seater incubator spot No. 23.

It’s not the first time Saransh will be teaming up with Carousel, having had a sell-out residency at the old Carousel in 2020, but this pop-up will be a longer-term collab meaning more chance for you to try the cult curry. The pop-up will be serving that signature butter chicken, made using an 80:20 (rather than 60:40) ratio of tomato and dairy and an infusion of smoke, with dal makhani, jeera rice and smoked butter naan, as well as chicken & cauliflower tikka pakora bites, chicken tikka burgers, and skin-on fries with butter gravy.
