Calling all carnivores! If you find yourself flailing when it comes to carving your Sunday roast or you wanna be able to tell your rumps from your ribeyes, this is the beef butchery class for you. Run by The Ginger Pig, aka one of the best butchers in the biz, you’ll get a hands-on lesson in traditional butchery skills and learn more about where your meat comes from – and yes, there will be plenty of eating opportunities too.
Hosted at the Marylebone branch of The Ginger Pig, which’ll be closed for the night especially for the class, the evening begins with a round of sausage rolls (some of the best in London FYI) and other Ginger Pig treats whilst you pop on your butchery aprons. Butcher Borut will talk you through all things beef, including how dry-ageing works and what to look out for when buying beef. Then it’s time to tackle that cattle – the focus will be on the central part of the animal, where you can find the sirloin, rump, ribeye and fillet, and with a little expert tuition, you’ll prepare a côte de boeuf joint from the rib.
Once your knives are down, you’ll get to tuck into a hearty beef roast with dauphinoise potatoes, followed by pudding, all served with plenty of wine. And in case that wasn’t enough beef for one night, you’ll get to take home the very same côte de boeuf you butchered in the class to cook at home.
