Seafood fans, you’ll want to get Faber on your list ASAP
After delivering shellfish and seafood around East London by bike during lockdown and then transforming The Victoria pub in Mile End into a seafood gastro pub, Matt Ward and Anthony Pender have taken their obsession with fish to the next level with Faber in Hammersmith. The restaurant, where Ollie Bass (ex-Quo Vadis and Sessions Arts Club) is Executive Chef, is centred around coastal produce from across the UK, which they get from suppliers like regenerative seaweed and shellfish farm Câr-y-Môr, Portland Shellfish, Isle of Wight Tomatoes, Maldon Oyster Company and Shrub Provisions.
The offering at Faber, which includes a daily market blackboard menu, a workers lunch special, and a la carte menu, changes according the catches hauled in by their fishmongers, but you can expect dishes like:
- grilled cod cheek skewer with tartar sauce
- chalkstream trout tartare with soya, keta caviar and nori
- butterflied Devon mackerel with parsley & anchovy
- BBQ Orkney scallops with cauliflower & pastis puree, pickled cucumber and chervil
- stuffed cabbage with leek, celeriac & Corra Lin cheese
- plaice with cafe de Paris butter
- Cornish mussels in a white wine, shallot & cream sauce with sourdough
The coastal theme continues on the drinks list, which features cocktails like the Sugar Kelp Old Fashioned (with Wrecking Coast Rye Whiskey, sugar kelp and bitters) and the Monksbeard Martini (with Wrecking Coast Scurvy Gin, Noilly Prat, monksbeard, lemon and samphire), and wines sourced from coastal British and European vineyards.
