Aqua Restaurant Group’s Spanish spot Aqua Nueva has a new chef heading up the kitchen
Mateo Garcia Leiva knows Spanish food – he grew up in his family’s Tarragona restaurant and has spent time cooking in the five-star Le Méridien in Sitges and the three Michelin-starred ABaC in Barcelona – and now he’s bringing all that experience to the Aqua Nueva kitchen.
For his first menu at the restaurant, Mateo has taken inspo from the Fiesta de la Rosa Azafran, aka saffron festival, in Spain, adding dishes of saffron-infused eel bisque poured over smoked eel, pumpkin and saffron sofrito; pan-fried red mullet, saffron potato and saffron suquet; and arroz con leche with saffron and mango. These specials are available on the a la carte menu alongside the likes of:
- Catalan fuet cone with fried quail egg
- cod brandada with burnt Seville orange
- prawn paella with squid sofrito
- pan-fried Scottish turbot with caviar, Cava espumosa & cauliflower puree
- Catalan cream with caramelised popcorn & pineapple granita
- Eton Mess with sangria sorbet
Aqua Nueva’s bartenders have created a Saffron Fiesta cocktail, with saffron-infused calvados, ginger syrup and orange bitters, to go with the special saffron plates, and there are also plenty of Spanish grapes represented on the wine list too.
