In keeping with their seasonal and sustainable ethos, the Gladwin Brothers are doing Regenuary rather than Veganuary this month
With their five London restaurants – Sussex in Soho, The Shed in Notting Hill, Rabbit in Chelsea, The Fat Badger in Richmond and The Black Lamb in Wimbledon Village – Local & Wild showcases the best in farm-to-fork dining, with seasonal and wild ingredients from a variety of local producers (including the Gladwin Brothers’ own family farm and vineyard in Sussex) featuring across all the menus.
Though each of the restaurants has its own distinct touches, like the shabby-chic interiors at The Shed, the theatrical butchers table at Sussex or the farm shop attached to The Fat Badger, they all bring the best of the English countryside to the capital. Each restaurant is also running the Veganuary alternative, the Regenuary menu, featuring six environmentally-themed courses made with ingredients that are produced regeneratively. The dishes include:
- mushroom marmite eclairs
- rope-grown mussels with white wine butter sauce, charred kale and Gladwin chorizo
- stuffed leek heart with cheddar fondue, onion confit and candied hazelnuts
- paprika cuttlefish with black beans, almonds and sweet chilli
- wild fallow deer with hen of the woods mushroom, pickled wet walnut emulsion and tarragon crumb
- spotted dick with mincemeat sponge and burnt butter custard
