These east London restaurants are putting their own spin on Nikkei cuisine
After working at Chotto Matte and Sushisamba respectively, Denis Gobjila and Victor Rosca decided to join forces and open their own Japanese-Peruvian fusion restaurant to showcase their take on Nikkei food. Bamboo Mat, which has sites in both Leyton and Stratford, features a range of fresh and vibrant dishes, including:
- seabass ceviche with aji amarillo, tiger’s milk, sweet potato, red onion and cancha corn
- hamachi tiradito with yuzu truffle soy and aji amarillo
- chutoro tiradito with pickled wasabi, harumaki skin, yuzu and sesame ponzu
- seared salmon tataki with coriander
- deep-fried nobashi shrimp
- chicken anticucho
- ox cheek with yuzu potato puree and teriyaki sauce
- A4 grade wagyu beef with Japanese BBQ sauce and pickled wasabi
Sushi fans are also well catered for with a range of maki rolls on offer, like mango maki (with avo, cucumber, romano pepper, mango puree and sriracha sauce), Vulcano maki (with salmon, seabass, cucumber, asparagus and avo), and the signature Ceviche Hot maki (with seabass, prawn, aji amarillo tiger’s milk and salsa).
You can’t have Japanese food without sake or Peruvian food without pisco sours, so of course you’ll find both (plus fusion cocktails and Japanese beer) on the drinks list, and there’s also a bottomless brunch with prosecco, Peruvian cocktails and wine available at the Stratford restaurant on the weekends.
