flor to open in borough market

Chef James Lowe and GM John Ogier, the team behind Lyle’s in Shoreditch, are opening a second site just off Borough Market this summer. Flor will be taking over the space where Pattiserie Lila used to be and it’ll be part wine bar, part bakery. The duo are billing it as a ‘little sister’ to Lyle’s, so the philosophy will be the same – quality ingredients from many of the same producers and suppliers – but the menu will be different.

The team is taking inspiration from pintxos bars of San Sebastian and Parisian buvettes and they’ll be producing all the baked good in-house, using British wheat milled at Lyle’s. Pastries like danishes, croissants, sourdough caramel brioches and birch syrup kouign-amanns will be available in the morning, with the likes of Mangalitsa and comté potato bread sandwich and white asparagus with honey and walnuts on at lunchtime.

The evening menu will feature dishes like burrata with grilled bread and salted tomatoes; lamb ribs with yoghurt and black lime; whole Dover sole with capers; and chocolate sabayon tarts. The Saturday brunch menu sounds just as good with plates including coddled eggs with trout roe and za’atar; purple sprouting broccoli with cured egg and kipper butter; and eggy bread with maple and black pudding.
