Tom Griffiths is taking his Flank concept to Stratford as he launches a new residency at The Print House. Currently found in Old Spitalfields Market and Market Halls Victoria, Flank is all about nose-to-tail eating and cooking over fire and that is being expanded with the Flank OG BBQ menu.
Small plates include pig head sub roll with BBQ glaze and burnt end beef naan with chilli sambal, with the mains coming as trays – you choose from the likes of Galloway glazed short rib, spicy smoked offal, and coal-buried summer squash and goat’s curd, and that gets served with pickles and a white slice. You can also add on sides like pork lardo sticky rice and bone marrow potato slice, and a range of sauces too. Or you can go for the special of glazed duck served with duck fat naans and duck leg clay pot. And if that wasn’t meaty enough, Flank OG will be doing its spin on a Sunday roast with sharing trays of roasted meats piled with roast potatoes, BBQ greens, creamed spinach, blood cake stuffing and gravy. Bring on the meat sweats.
