Madina Kazhimova and Anna Dolgushina, the St Petersburg-based restaurateurs who run Wong Kar Wine, are coming to London with Firebird this summer. Opening on the old Corazon site in Soho, it’ll be something of a departure for the pair, focusing on European flavours and cooking over fire rather than the modern Thai food they serve at Wong Kar Wine.
The menu, created by ex-Caravan Head Chef Nikos Kontongiannatos, will include the likes of oysters with fermented cucumber & dill; charred peached with ricotta & coriander; tiger prawns with tomatoes & white wine; grilled halloumi with Greek honey & truffle; pork belly with plum ketchup & green salad; day boat monkfish with sauce vierge; torched baked Alaska served by the slice; and grilled pineapple with coconut sorbet & pistachios.
Anna Dolgushina is a sommelier so she’ll be in charge of the wine list, which’ll focus on natural and biodynamic producers. The cocktails sound well worth a go as they’ll be featuring flame-cooked ingredients too – hello Toasted Sesame Sours, Charred Pineapple Daiquiris and Smoked Bellini Highballs.
