Sauterelle at the Royal Exchange is welcoming the Gio Group and Michelin-starred chef Felice Sgarra, from Umami in Andria, Italy, into the kitchen for a very spesh one-off dinner. Felice will team up with Sauterelle Executive Head Chef Stefano Leone to cook up a menu inspired the Pulgia region of Italy, with dishes including prawn tartare with pork guanciale, lentils and wild chicory consomme; pasta with sweet olives, asparagus and burrata; octopus with black chickpea, orange and courgette flower; and ricotta, almond and figs with bitter dark chocolate. Tickets for the dinner cost £45 and includes fizz on arrival. And if you fancy diving deeper into Puglian food, Sauterelle is hosting an artisanal showcase the day before, featuring a select range of producers and a masterclass where you can discover how to make mozzarella from scratch.
