10 Heddon Street is currently home to Pacific, the Aussie-Japanese concept from Shaun Presland, but it’s all change again come March, as Fallow moves in. Run by ex-Dinner by Heston chefs Will Murray and Jack Croft, Fallow is all about creative yet sustainable cookery with a nose-to-tail and root-to-stem approach to food.
The pair did their first residency at Carousel back in November and are currently in the middle of a two-month stint at Crispin in Spitalfields. The Mayfair menu is set to feature corn ribs; chicken scratchings; salmon with horseradish, bone marrow & parsely; dairy cow with smoked beetroot & ox tongue trencher; Yorkshire rhubarb with white chocolate & yoghurt; and cheese with malt loaf cake, walnut & date puree.
