He’s doing it with the team behind Dalston wine bar dan’s
Over the last 18 months, chef Eric Wan (ex-Dinner by Heston) has been popping up around town (and in Paris and Shanghai) with Lá Lốt. The modern Vietnamese concept is inspired by his Chinese-Vietnamese background and his mother’s birthplace of Chợ Lớn in Saigon, and it’s where he’s been doing his twist on traditional ingredients and street food dishes.
Now he’s partnering with the team behind dan’s in Dalston to open Tempo on Paradise Row in Bethnal Green. Taking over one of the arches at the end of the year, Tempo will be a new wave Asian restaurant showcasing Eric’s modern, punchy dishes and juicy wines from Europe, Australia and beyond.
Eric’s menu is set to include dishes like:
- whipped tofu with braised aubergine and wonton crisps
- Chalk Stream trout with nước mắm and shiso
- prawn toast with lime leaf and daikon
- chicken & lemongrass sa tế with sweet basil
On the wine side, the changing list will range from easy drinkers to serious bottles, with Dan and the team on hand to share recs and match wines to the food and your mood.
Speaking about the opening, Eric said: “We’re stoked to be joining the East London scene – it’s inspiring to be surrounded by so many iconic spots. Tempo is about keeping things relaxed but never predictable. With bottles constantly rotating on the shelves and a menu that’s always evolving, we want every visit to feel fresh. We take the food and wine seriously, but everything else is easygoing – a place to eat, drink, share, and genuinely have a good time.”
Tempo is opening towards the end of the year but if you can’t wait to get a little taste, it’s taking over Carousel across Fri 17th & Sat 18th October.
