The Dusty Knuckle Bakery’s Guest Chef Series Is Back

The Dusty Knuckle has brought its Dusty Dinners series for the spring and the next event of the series will see Eric Wan of Lá Lốt take over the kitchen. Eric’s Vietnamese pop-up is inspired by his Chinese/Vietnamese background and his mother’s birthplace of Chợ Lớn in Saigon. Expect twists on traditional ingredients and street food dishes, such as fried lemongrass chicken, crispy garlic and rau răm; pork belly, caramelised fish sauce and pickles; and roasted pineapple and salted coconut cream for dessert.

After that, writer, chef, and mental health advocate Marie Mitchelle will be bringing a menu of British Caribbean dishes to The Dusty Knuckle. These will include the likes of cornbread with thyme cream cheese and pickled chocho with scotch bonnet; lightly battered hake in coco bread bun with green seasoning mayo, greens and plantain crisps in lime and scotch bonnet salt with a pickled creamy coleslaw on the side; and lime and ginger cheesecake with lime zest and candied limes. Plus, Marie will be serving up TT Lime Punch, a fermented lime juice rum punch with spiced sugar syrup served over ice.
