BUNS OUT because there’s a new burger concept in town and it’s popping up at Catalyst Cafe in February. Dreamerz Burgers, run by Silo chefs Ryan and Will, is all about fire, fermentation and fuck-all waste. They turn by-products from the dairy industry, along with the best seasonal produce supplied from in and around London and ancient fermentation techniques, into umami flavour bombs that you’ll defo want to get your hands on. The pair will be serving up zero-waste burgers for eating in and taking away, with Rastislav Kasár shaking up the cocktails, and a live DJ to keep the party vibes going. No ressies needed, so just rock up and dig in.
