David Carter Is Opening a Second Greek Restaurant in Borough Market

The Smokestak founder and Manteca co-founder is adding to his previously announced opening OMA

Why open one Greek restaurant when you can open two? That seems to be David Carter’s philosophy as he’s opening AGORA, inspired by the street markets of Athens, in Borough Market underneath OMA, which is taking influence from the Greek islands and the Levant. While the upstairs OMA will offer a more elevated take on Greek food, AGORA will be more casual, with a two-metre souvla rotisserie grill at its heart and a bar and takeaway hatch facing out onto the market, for people to grab coffee, bakes and cocktails on the go.

Nick Molyviatis, who’ll be leading the OMA kitchen will also be overseeing the AGORA menu, with founding head baker at E5 Bakehouse Eyal Schwartz developing the breads for both restaurants. At AGORA, there’ll be British grain wood-fired flatbreads with spinach tzatziki & crispy garlic and strained yoghurt, feta, oregano & Aleppo chilli oil. The likes of rolled lamb shoulder, Somerset Saxon chicken and native breed pork shoulder kontosouvli (plus whole spit-roast animals on the weekends) will be going on the rotisserie, with potatoes underneath to soak up the drippings.

The bar will be shaking up refreshing cocktails like rhubarb sours, cucumber & elderflower spritzes and frozen green chilli margaritas to go with those grills. Now all we need is some of that Greek sunshine….
