A slice of Mexico is coming to Dalston as Ruby’s is getting a brand new kitchen and bar. Corrochio’s, run by chef and cocktail wizard Daniel Corrochio (who actually used to run Ruby’s and has worked with founder Tom Gibson at his pub The Bluecoats in Tottenham as well) will be tucked away by the main bar at Ruby’s and will be an intimate spot at just 30 covers. Daniel’s menu combines authentic Mexican dishes, with recipes inspired by his mother, with lesser-known Mexican spirits. On the food front you can expect the likes of mini sope corn canapes filled with 8-hour lamb barbacoa; crispy grilled vampiros with roasted salsa & manchego and topped with pork pastor, cactus, lamb or Mexican truffle; and roasted beef & bone marrow with salsa verde on blue tortilla taco.
Daniel’s list will feature a range of tequila, mezcal, sotol and raicilla as well as inventive cocktails like the Mezcalita (hibiscus caramel, spicy jalapeno syrup, pineapple & Koch El Mezcal), the Monarca (Abasolo Mexican whiskey, nixta corn liqueur, mole, hoja santa bitters & Cocchi di Torino), and the Mexican Brunch (homemade hibiscus jam, egg white, fresh grapefruit, Tapatio Tequila & a creme brulee top).
