cornerstone to open in hackney wick

After learning his trade under Nathan Outlaw, both in Cornwall and in London, Tom Brown is set to open his first solo venture called Cornerstone this April. Located on Prince Edward Road in Hackney Wick, an area more commonly associated with clubs, artist studios and breweries, it’ll be interesting to see how a fairly sophisticated restaurant will fare in these parts.

Designed for sharing, dishes will be priced between £8-£14 and include raw mackerel with lime pickle, coconut yogurt and crispy garlic; marinated squid with black pudding, blood orange and a brown butter dressing; and ox tongue served with salt cod, tomatoes and gremolata. We’re loving the sound of desserts too – pear crumble with earl grey ice-cream and coffee ice-cream sandwich served with a banana, pecan and rum sauce sound right up our street.

There will be strong links with Cornwall both through the sourcing of the fish and a partnership with Cornish distillery The Wrecking Coast to create a bespoke gin exclusively for the restaurant. Cornerstone’s gin will be light and fresh with citrus tones – the perfect accompaniment to seafood we are told.
