Brasserie-meets-tapas bar BIBO, from three-Michelin-starred Spanish chef Dani Garcia, has been already been announced for the new Mondrian Shoreditch hotel but it’s not the only resident moving in as Christina’s is opening on the ground floor. The all-day spot will be serving up coffee from Redemption Roasters and pastries from Chestnut Bakery, so you can start the day with a miso salted caramel chocolate ganache croissant and a cup of Christina’s bespoke blend.
From lunchtime onward, sandos made with slow-fermented Tokyo milk bread are on the menu with varieties including spicy fried chicken, egg & mayo, aubergine parmigiana, deep-fried mortadella katsu, wagyu beef katsu (in limited numbers per day), and fruit & cream sando with matcha milk bread. Modal Wines have curated a natty wine list and Marcis Dzelzainis, co-founder of Idyll Drinks, has created a cocktail menu with a focus on sustainability and wild ingredients, so you can sip on the likes of the Birch Bark Martini, Wild Nettle Spritz, Wild Meadow Sour, Yuzu Negroni, and Oyster Shell Vermouth & Martini in collab with Victory Distillery.
