might have only just reviewed Rawduck (and discovered the Dirty Bird) but they have already given us another reason to write about them. The Hackney restaurant is about to launch CHEF on the PANINI nights on Tuesday 3rd September with Mark Hix stepping up to the challenge.

With no kitchen and very few facilities other than a coffee machine and a panini, Rawduck have asked a selection of cooks and chefs to take the challenge and create a menu of small dishes that can be cooked using this, and only this basic equipment.

Mark Hix is the first to rise to the occasion and promises poaching on the coffee machine and a lot of smoke ‘n’ spices on the panini accompanied by Black Cow cocktails. Artists Tim Noble and Sue Webster, author and cook Jo Jo Tulloh, Michelin chef Nuno Mendes and Julian Biggs are also in line to step up and have a go. Whilst the equipment might be basic with experts like these we expect the food will be anything but!
