Carlo Scotto, previously head chef at Xier, is swapping Marylebone for Mayfair this September to open a new restaurant Amethyst. The 24-cover spot will serve up three- and four-course menus at lunchtime before switching to six- and 15-course tasting menus at dinner. And if you’ve been missing out on cooking yourself even after a year of lockdown, you can get involved and actually prepare a dish here (under Carlo’s watchful eye of course) as part of Amethyst’s chef’s table experience, which is designed to take you behind the scenes of a high-end kitchen. Watch out MasterChef. That’s about all we know about Amethyst so far but we’re expecting the same unusual flavour combos and artistic flair Carlo cooked with at Xier.
