Master sommeliers Xavier Rousset and Gearoid Devaney are teaming up to bring Burgundy to the City in the shape of their new joint Cabotte. All about the finest French food and wine, Cabotte sees Ed Boarland, previously of The Waterside Inn and Gordon Ramsey at Royal Hospital Road, head up the kitchen. His menu will feature dishes like Ouef Meurette and Jambon Persille as well as classics like Beef Cheek Bourguignon and Tarte Tatin. And given that Cabotte is the brainchild of two wine experts and backed by twelve Burgundian producers, the drinks list is extensive to say the least…we’re talking 600 wines with 500 of those coming from the Burgundy region. We’ll drink to that.
