Agua De Madre, the water kefir brand (a low-alc drink full of live cultures), is hosting its first chef residency at its Hackney fermentary Casa De Madre. French Chef Bruno Breillet, who’s popped up at markets across London and has a bakery in Rochester in Kent, will be cooking up a menu full of fresh and vibrant South American and Mediterranean-inspired dishes with a few fermented elements thrown in for good measure. The Casa will be taking care of the bevs, shaking up cocktails made using water kefir, like the mezcal Madre-Rita, to go with Bruno’s food.
