We all know Borough Market is home to some of the best produce in town and a big source of inspo for the city’s chefs, so it’s a wonder it’s taken them this long to launch their own restaurant. Borough Plates is a two-month pop-up that invites guest chefs to collaborate with traders and suppliers to create a weekly-changing menu that uses only ingredients from the market, including charcuterie from Cannon & Cannon, Sussex Fish red mullet served with seared scallops and rainbow chard, and raw milk panna cotta using dairy from Hook and Son. So not only can you sample some of the market’s finest produce, you can buy the very same stuff to take home to your own kitchen too.
