Borough Market is firing up the coals this September for Flame & Smoke – a brand-new after-hours celebration of the theatre and flavour of live-fire cooking. Taking place on Thursday 10th September from 6.30pm to 9.30pm, it hands the spotlight to the market’s expert traders, chefs and restaurateurs, who’ll serve up specially created small plates while a live DJ soundtracks the evening. At the heart of it all is a central fire pit and demonstration stage, compered by Shauna Guinn of Hang Fire BBQ, one of the leading figures in British barbecue.
This being Borough, it’s a cut above burnt bangers in the garden. The menu draws on fire-cooking traditions from Southeast Asia, South Asia, the Mediterranean and beyond, with traders collaborating across the market to build original dishes – think Argentinian steak with chimichurri from Porteña, Brindia’s Txuleta steak and chorizo sandwiches, Ginger Pig’s smoked beef prime rib with beef-fat béarnaise, and barbecued oysters with scotch bonnet jam from Pimento Hill. Throughout the night, familiar faces and special guests take to the stage to share the techniques behind the perfect sear, from managing heat to cooking low and slow over smoke. It all unfolds across the Green Market, spilling into the open-air space beside Southwark Cathedral.
Flame & Smoke follows the success of the market’s Evening of Seafood earlier this year, and is part of Borough’s growing programme of after-hours events. At just £7 a ticket, it’s the perfect alfresco evening to round off the summer.
