Basque Steak Restaurant Ibai Is Coming to the City This Summer

It’ll focus on food from the French Basque region

You’re not short on places to find a decent steak in London but Ibai is promising to bring something new to the city’s carnivores. Meat suppliers Txuleta, founded by Nemanja Borjanović, is teaming up with ex-Chiltern Firehouse exec head chef Richard Foster to open the restaurant close to St Paul’s.

As well as showcasing the finest Txuleta beef, like Galician Blond, British Wagyu and Black Angus (Ibai will have direct access to the farms, giving the restaurant full control over the supply chain), the kitchen will cook up dishes like king crab rice, tuna T-bone, Aldabia corn-fed chicken, boudin blanc black pudding, ‘guisante lagrima’ – teardrop peas, and Gateau Basque with almond and black cherries.

In addition to the restaurant where he’ll oversee the front of house along with William Sheard, Borjanović (who is also the joint owner of Lurra and Donostia in Marylebone) is working to establish the Galician Blond breed in the UK – he has a smallholding on the Gorhambury Estate in St Albans and the aim is to be able to supply Ibai from it.
