Former Asia de Cuba executive chef Michael Hanbury is bringing the Caribbean to Waterloo as he opens his debut restaurant Antillean this June. He’s taking over the converted coachbuilding works where Baltic has been for the last 20 years, so Antillean is sure to look the part. In terms of the food, the menu will reflect the French, African, Spanish, Indian, Dutch and Chinese influences on the Caribbean with lots of seafood, tapas-style dishes, Saturday brunch and Sunday roasts. Naturally rum will feature on the drinks list and cricket fans may spot some nods to the sport in some of the cocktail names.
