allan pickett joins swan, shakespeare’s globe
Allan Pickett, from sorely-missed Piquet, is back in a kitchen at last joining Swan, Shakespeare’s Globe as Executive Chef. The restaurant itself has had a bit of a refurb and now Allan’s revamping the menu with his own spin on classic British cooking, with many of his homemade preserves and compotes making an appearance. The spring menu includes dishes like scallops with Granny Smith apple and squid ink mayonnaise; Old Spot pork belly with black pudding, celeriac and Somerset cider brandy prunes; venison haunch and faggot, braised red cabbage and damson preserve; and a bitter chocolate mousse with ginger and farmhouse yoghurt. And with a breakfast offering, afternoon tea and pre-theatre menu, Swan, Shakespeare’s Globe is set to be one of the best all-day dining spots on Bankside.
