It follows the eponymously-named Akira Back, which opened earlier this year
Michelin-starred chef Akira Back operates 28 restaurants around the world, in cities including Bangkok, Las Vegas, Singapore, Paris, Dubai, Seoul and Istanbul, and now he’s added London to that list with his openings inside the new Mandarin Oriental Mayfair in Hanover Square. Not content with bringing us just one space, he’s doing three – the 148-cover Akira Back restaurant, cocktail bar ABar Lounge, both open now, and chef’s table restaurant Dosa, which is opening this September.
Whereas Akira Back showcases his modern take on Japanese food, with dishes like AB tuna pizza and dynamite lobster with pickled shimeji, Dosa (named after the Korean word for ‘expert’) will be serving a Korean-inspired tasting menu. The restaurant will be a 14-seater counter set in a space that’s taken design cues from mineral elements – so think darker colours and angular shapes.
Dosa will be led by Chef Jihun Kim, who helped open the first Dosa in Seoul, and will be serving an eight-course menu that takes influence from Korean traditions and techniques. The menu will change regularly but you can expect dishes like:
- Mulhoe – a fisherman’s chilled soup from Pohang with wild pink seabream, donchimi, red pepper, salsify and wasabi sorbet
- Majangdong – inspired by a district in Seoul known for its Hanwoo beef, this features three cuts of beef turned into Yukhoe bibimbap (beef tartare mixed with rice) and bulgogi
With Yannick Alleno’s Pavyllon in the Four Seasons Park Lane, Mauro Colagreco’s eponymous restaurant at Raffles at The OWO, and Jean-Georges Vongerichten at The Emory also all now open alongside Back’s main restaurant, it seems that the trend for big name international chefs at high-profile London hotels isn’t dying anytime soon.
