Ecover and chef Tom Hunt are teaming up to open the Rubbish Cafe where the only accepted form of payment is recyclable plastic rubbish. The veggie and vegan menu will be zero-waste, with bowls including spelt and rye grains with red kale, beetroot soya-yoghurt, roasted rhubarb and a pickled hen’s egg, and wild turmeric rice with cauliflower, golden sultanas, chaat masala and coconut, and the decor, designed by Max McMurdo will all be upcycled too. You can even pick up free refills of washing up liquid at the pop-up too, so round up all your plastic rubbish and go eat for FREE.
