A hojicha cake, choux au craquelin and rye galettes from a former Forno pastry chef and all her baker mates
Issy Bresson, previously Head of Pastry at Forno, is running a one-day bake sale at N5 Kitchen in Finsbury Park on Sunday 2nd August, from 9am until the food runs out, with all profits going to Women for Women International, which supports women affected by war and conflict. The menu leans seasonal and specific: a hojicha cake with plum compote, black sesame praline and hojicha meringue buttercream, an almond and olive oil cake with roasted apricot, whole wheat choux with mascarpone zabaglione cream and peach, and rye pastry galettes topped either with marinated courgette and stracciatella or tomato and pickled chilli. Coffee comes from Mission Coffee Works, alongside JENKI matcha and a couple of house-made syrups and cold foams.
The event has pulled in donations from a fair spread of London’s independent food suppliers, including Gilchesters Organics, The Estate Dairy and Land Chocolate, among others.
