A New Northern Thai BBQ Concept Is Coming to The Globe Tavern

Khao Bird, a residency from the creator of Brighton’s Lucky Khao, will launch this September

Mike Palmer, along with head chef Luke Larsson, has been running hot Brighton Thai spot Lucky Khao since 2019 and now he’s set to make his London debut with a residency at The Globe Tavern. Following in the footsteps of Adejoké Bakare (the brains behind Chishuru), the TÓU team and more, Palmer will be launching his new pop-up, Khao Bird, at the Borough pub in September.

Khao Bird is being billed as a Northern Thai BBQ spot, inspired by the open-air night markets found in and around Chiang Mai. Though there’ll be a focus on regional dishes such as Gai Yang (grill marinated chicken) and Khao Soi (curry and noodles), you can also expect the likes of:

  • White corn ribs from Sussex with laab sauce and coconut relish
  • Sussex Veg Som Tam with Bermondsey Street honey
  • Thai hot dogs (sai-ua) made with Chiang Mai-style herb pork sausage with pickles, phrik num jam on a milk roll with spicy jaew relish for dipping
  • Pork Hung Ley, a Burmese curry with slow-roasted Sussex pork, peanuts, broth, wild ginger and pickled garlic
  • Chiang Mai BBQ Sussex chicken with lemongrass, white pepper, coriander root cooked slow over charcoal with broth, tamarind sauce and roasted chilli jaew relish

Drinks-wise, there’ll be a selection of wines looked after by sommelier Zeren Wilson, while a short list of cocktails will include the likes of Thai-inspired twists on margaritas and beers will be sourced from Bermondsey and surrounding breweries (expect some local Thai lagers too).
