Andrea Asciuti, founder of 081 Pizzeria, is behind the new venture
2025 was a big year for pizza in London; pizzerias doing all manner of Italian and regional American styles opened on the regs (with three in the space of week over the summer) and we did a big deep dive into the phenomenon that is ‘London-style’ pizza. With the news that Connie’s Pizza is opening in Peckham this January, it’s clear our love of pizza is still going strong in 2026.
Connie’s Pizza, created by 081 Pizzeria’s Andrea Asciuti, named after his wife and inspired by his daughter, is being billed as the ‘UK’s first Bri-talian pizza concept’. That means it’s ‘London-style’ pizza made by Italians, where Italian techniques are blended with British flavours. Whereas the pizzas at 081 are distinctly Neapolitan, the ones at Connie’s will be made using a high hydration dough, made with American flour, fermented for 36 – 48 hours and baked at different temperature to achieve a light and crisp, not floppy, base.
The pizzas will be topped with British ingredients, including mozzarella and stracciatella produced here as well as mushrooms, leeks, aubergine, pork, chicken and more. Sides will include meatballs, deep fried mac ‘n’ cheese and mozzarella sticks, with mini brioche filled with ricotta and whipped cream as the single dessert.
