A ‘Beak to Tail’ Yakitori Restaurant Is Coming to Holborn

Hotori will be celebrating all the parts of a chicken

Is yakitori having a bit of a moment? First it was Yari Club, bringing robot-prepared yakitori to Covent Garden, and now another specialist yakitori restaurant is on the way. Opening in Holborn in November, Hotori, run by Mike Zheng and Kuangyi Wei, will be offering a ‘beak to tail’ menu of chicken skewers using free-range, slow-reared birds from Fosse Meadows.

The 17 chicken yakitori options will include engawa (belly); soriresu (chicken oyster); bonjiri (tail meat); kashiwa (thigh); tebamoto (wing); tsukune (chicken meatball); nankotsu (cartilage); sunagimo (gizzard); and hatsu (heart). Wagyu, miso black cod and vegetable skewers will also be available alongside prawn and vegetable tempura and chicken karaage. If that sounds like a lot of choice, Hotori will be doing a range of set menus featuring different skewer selections plus bento boxes with rice and salad that can be taken away for an easy lunch.

If you have the time though, it sounds like it’ll be well worth eating in. Not only will you be able to see all the skewer action thanks to the open kitchen counter and custom 1.4 metre hibachi grill, the drinks list will feature an extensive sake collection (including bottles from both Japanese breweries and London’s own Kanpai brewery), Japanese whiskeys, and a curated wine list designed to pair with the different cuts of chicken.
