Follow Executive Chef Amit Baygal (ex-Benares and Kanishka) on a journey through India at new restaurant Yaatra at the Grade II-listed Old Westminster Fire Station. Some of the original industrial features, like the heritage-listed tiles, from the building have been kept and mixed with tapestries and jewel tones to add Indian flair to the space.
The menu features dishes from across the country, showcasing cooking styles from major cities to little-known villages, including:
- Amritsari prawn with sweet pepper bhajia
- Darjeeling momos
- Coorg beef shukka
- Khubani paneer tikka
- Madurai seabass & clam kiri hodi
- Nilgiri lamb rack with tempered potato salad & honey glazed carrot
- Garhwal goat osso bucco with Himalayan spices
- Rajasthani roe deer laal maans with roasted beetroot and saffron mash
Mixologist Nicholas Smith is shaking up the cocktails, which also feature plenty of spices, with the likes of the Yaatra Royale (Grand Marnier, cognac, and orange & cinnamon scented jaggery honeycomb), the Szechuan Negroni (tandoor pineapple and Szechuan pepper portobello gin, sweet vermouth and Aperol), and the Coconut Cloud (spiced white rum, toasted coconut & curry leaf shrub, coconut cream and lime).
