Bjorn Frantzén, the chef behind the 25th best restaurant in the world, is coming to London, opening his first site in the UK at Harrods, taking over a 112-cover, two-floor restaurant, bar and roof terrace space (the first ever for Harrods) that’s been custom designed especially for him. Studio Frantzén will blend Nordic and Asian influences, with the menu including dishes like:
- tatar of tuna & red deer, white kombu, wasabi-infused cream, fermented plum & warm ginger butter
- quail with dried spruce, bee pollen, vanilla & black pepper emulsion
- roast scallops with scrambled duck eggs, black truffle, beurre noisette, crispy lichens
- veal minute ‘ma la’, fermented kampot pepper jus, crispy shiso salad, ceps aioli, sake braised maitake
- Sweden vs Japan: braised Swedish dairy cow beef brisket and grilled Japanese wagyu with lemongrass jus & Japanese mustard
- After Eight tart: soft serve lingonberry sorbet, semi-dried lingonberries, blackcurrant syrup, liquorice meringue
- sticky toffee pudding, miso caramel, bourbon, sesame ice cream, candied pecans
The Frantzén group runs a number of restaurants including the 3 star Frantzén in Stockholm (no. 25 on the World’s 50 Best list) and 3 star Zen in Singapore, and we imagine Studio Frantzén will be pitching for the stars too.
