First, we had news of an avocado bar and now an aubergine pop-up is opening in Shoreditch. Yes, ‘AU-EM-GEE’ is popping up in Spitalfields Market to celebrate National Vegetarian Week as a collaboration between The Vurger Co. and Tabasco. The menu will include The Auberger; an aubergine, onion & chickpea burger with smoked cheese &chipotle sauce, slaw, hummus and pea guacamole. But if you wanna get your mitts on that aubergine, you better get down quick as this pop-up is only around for three hours – yes THREE hours!
