CUB, located on Hoxton Street, is the new sustainable cocktail-led restaurant from Ryan Chetiyawardana – AKA Mr Lyan – and Doug McMaster of Silo, Brighton’s most eco-friendly restaurant. It’s the third time the site has changed its identity but we think it might be third time lucky as it’s definitely our favourite incarnation.

The restaurant’s ethos focuses on using up all of each ingredient – so no waste – and if you went along to WastED in Selfridges where these guys ran the bar, you’ll see the similarities. The design is very cool and there’s elements of the ‘no waste’ ethos throughout with tables made of recycled yoghurt cartons – although due to its size you might find yourself sharing a booth with another couple though it didn’t affect our experience, we’re sociable.

Whilst you can swing by for a drink, we’d encouraged you to stay for the tasting menu which is 7 courses but, the difference here is that some courses are actually drinks, some are food and some are a mixture of the two. The menu changes frequently so there’s a good chance what we ate won’t be available but we can say each dish and drink was beautifully put together, from the way they looked to the flavours and textures. It was actually refreshing to eat dinner in a different way without it being overly gimmicky – no kinder egg-topped burgers here or unicorn frappes. Good vibes, sustainable food and no waste?
