Massimo Bottura, three Michelin-starred chef and owner of the world’s best restaurant Osteria Francescana, is opening a pop-up community kitchen for London Food Month. Following similar projects in Rio de Janeiro and Milan, and run by his non-profit Food for Soul organisation in partnership with The Felix Project, the Refettorio Felix will serve lunches made from ingredients that would have ended up as waste. Bottura will team up with a different British chef each day to produce the meals, which will be free or heavily subsidised, to help feed people who are struggling as well tackling the problem of food waste.
