all the current trends for Peruvian, American BBQ and Japanese ramen, one country that is sorely underrepresented in London restaurants right now is… Hawaii! Well, a new restaurant in Dalston, Pond, is now well and truly repping for the tiny Pacific islands by offering London its ‘first authentic Hawaiian restaurant’.

While Hawaiian food draws on a whole host of influences, including Japanese, turns out what they really love over there is a bit of SPAM. Starting off with a couple of boozy cocktails at the bar, we also had to check out the spam fries… golden wedges that look just like chips until you bite into the pink spongy middle – That’s gourmet grub right there people.

Other spam options include spam sushi, but we went for some more traditional tuna and salmon maki rolls, as well as some Poke, Hawaii’s take on ceviche, with big chunks of tuna, salmon and scallop. From the mains we can also recommend the huge smoked beef rib and the sambal back cod with shiitake mushroom and rice.
